Ready to Enjoy

Papaya is at its peak flavor when the skin has a slight give to your touch. When your papaya is ¾ yellow (and still has some green remaining on the stem end), wash it and cut about ½ inch off the stem end.  Then cut your papaya in half lengthwise.  With a spoon gently remove and discard the seeds (or use the seeds in some recipes, outlined below).  
Your papaya half is ready to spoon out and eat “as is” or add a little lime juice to accent the flavor.  And you might just want to eat the other half as well!

When to Refrigerate

Just like a banana, papaya is best when not too green and not too ripe. The PERFECT papaya is eaten at 3/4 yellow and gives slightly to a gentle squeeze.
We harvest and ship our papayas at 1/4 to 1/2 color change. They will continue to ripen and become fully yellow when left out at room temperature. Leave them out at ambient room temperatures and do not refrigerate before they reach 3/4 yellow. At this stage, papaya can be refrigerated and should keep their perfect taste and texture for up to ten days.
